The Escabeche restaurant at The Prince of Wales Hotel & Spa Serves exquisite continental cuisine in a classically elegant setting.

Each season, Executive Chef Andrew Dymond creates an original menu from the finest ingredients, both locally grown and imported from around the world. Out of this, he fashions dishes steeped in the traditions of France and England, and strikingly original in their execution.

Chef Dymond has developed close relationships with the Niagara Region's best producers. He uses organic greens grown locally at Wyndym Farms and often harvested just hours before being served. He buys sausages and prosciutto hams locally, from an individual who learned his trade in the family smokehouse in Abruzzi, Italy. Other ingredients are brought in from far away: wild mushrooms and foie gras from France, wild boar from the United States and cheeses from around the world.

Chef Dymond's philosophy:Don't overdo food. Treat it with the utmost respect in the most natural form, and you'll get the best presentation and product.

The same approach applies to the less formal menu in the Churchill Lounge, which offers a relaxed, informal atmosphere in a library setting. You can order from an all-day menu of sandwiches, pastas, and classic pub food. The dishes are familiar; the execution entirely our own.

You can also visit our Tapas Wine Bar, where you can sample vintages from the region and around the world in a comfortable, sunlit atmosphere.

In our beautiful sunlit dinning room of the Tiara restaurant at Queen's Landing Inn & Conference Resort, you'll enjoy a menu of classic simplicity inspired by the abundance of the Niagara Region.

In the tradition of European and Californian regional cuisine, Executive Chef Stephen Treadwell designs seasonal dishes created from the freshest local ingredients, complemented by top-quality products from around the world.

Chef Treadwell has created a partnership with Niagara-on-the- Lake's Wyndym Farms, which supplies seasonal organic vegetables and salad greens, often harvested just hours before they're served to our guests. His prosciutto and sausages come from a local artisan who learned his trade in the family smokehouse in Abruzzi, Italy. The products of local farmers figure prominently on every menu.

"The key to great cuisine, " says Chef Treadwell," is to interfere as little as possible with the natural attributes of the food. His motto, he says, is simplicity: the freshest product, the best product, simply prepared.

The same approach applies to the summer barbecue, situated on Queen's Landings waterfront patio, and the Bacchus Lounge, where you can dine informally in the atmosphere of a classic pub.

At the Cannery and Carriages dinning room in the Pillar and Post Inn & Spa , you'll find a relaxed, informal atmosphere and an extensive menu of perfectly executed favourites.

Executive Chef Randy Dupuis brings you a dinner menu of perfectly grilled steaks, fresh seafood and the Italian dishes you love.

The heart of our dining room is the hearth; a classic brick pizza oven where we make thin-crust California pizza. The hearth is also a serving station where there's something different happening at every meal. During breakfast it's an omelet bar; at lunchtime, a pasta bar. At dinnertime, we use it to make appetizers and desserts; and during Sunday brunch, to make waffles.

In the Vintages Wine Bar and Lounge, you can relax any time of the day or night with a glass of wine or a single-malt scotch, and a menu of classic pub fare.

The atmosphere here is very casual, says Chef Dupuis. Some people come in suits, others in jeans. " I like to hear the noise and the laughter."
